After exporting my video and looking at my results, the video ends up being really choppy and laggy

Choppiness like that is usually related to a mismatch of frame rates between your Original Media, the Project Settings, and/or your Export settings. Additionally, if your original media uses Variable Frame Rate (most phones and screen recording software do this), that often causes issues as well.
Please make a Tree report of your source media using the free MediaInfo tool. Then copy the result here.
