Are there any posts, preferably step by step instructions on how to size pictures so they don't appear zoomed in once imported into a project?

Hitfilm does not automatically resize imported media to your timeline dimensions.  From your description the still are larger than your project.

Use the scale function in the transform property group. You can also use the right click clip/layer transform "fit to ..." options.
